Why do we nicknamed New York "The Big Apple"?

is a matter of modesty.

When the marketing department of New York at the time wanted to give a nickname to the town, the choice fell first on the nickname of "The mighty super awesome gigantic apple". The term was however considered to be somewhat arrogant by citizens. We then proposed "The Very Enormous juicy apple." Same result.

After years of debate, it was agreed for "The Big Apple".

Note that this eternal debate between modesty and arrogance has always colored the history of the American metropolis. At its creation, for example, its founder gave it the name "So-new-It's-never-seen-before-York." It brought everything to "New York" a few weeks later.
